Great cooking isn't hard - it just takes some guidance from a good instructor. Elizabeth Peddey was awarded her Masters degree in Gastronomy at Le Cordon Bleu and has taught cooking for over ten years. Classes are run weekly out of her family home in Elwood - they are small, hands-on and inspired by Mediterranean cooking. As you progress through the course, your confidence will grow as you proudly cook and share meals with those you love!

What will you learn in this course?


This course has been created to demystify home cooking so that beginners can learn how to cook with ease and confidence.

There is so much more to cooking than just recipes. There is a whole philosophy of food and eating - a sensibility that is packaged in how to plan, shop, cook and eat. 

In each class you will work on Mediterranean inspired dishes with minimum ingredients and straight forward instruction.  You won't walk away from this with just a list of recipes, you will learn the simple principals that underwrite all cuisines and begin to grow into someone who cooks with spontaneity and confidence. 

Over the six weeks, you will be introduced to techniques including baking, roasting, frying, slow cooking, simmering, poaching and grilling.  You will be exposed to a wide variety of seasonal ingredients and the gastronomic knowledge associated with them, empowering you to become an informed consumer who seeks a return on investment in the ingredients you grow and purchase.

Curriculum


Week One - Starting from Scratch

Getting Organised: Ingredients, Equipment and Kitchen Philosophy
We start with learning some basic knife skills and the principles of Good Cooking -  In our first class, we will cook straight from pantry supplies - A quick pasta dish, a potato gratin, brown rice and a very simple yogurt dessert.


Week Two - Simple Menus

Learn how to create menus for today and tomorrow from your shopping and pantry ingredients. These dishes will be selected for their versatile nature and adaptability for use in school and work lunches. Think simple meals such as - Rosemary Chicken, Steamed Asparagus, Green salad and a Fruit Dessert.

Week Three - Essential Sauces

These four basic sauces will add so much flavour, dimension and colour to your meals, you won't be able to imagine cooking with out them. We'll cover, Vinaigrette, Salsa Verde, Herb Butters, Mayonnaise and Aioli, 


Week Four - Into the Oven
Meat, Fish and Vegetables all benefit from the browning and flavour boosting effects of oven roasting. In this class you will learn about how to salt and handle larger cuts of meat before cooking, the simplicity of baking fish and the beauty of a tray of roasted vegetables.


Week Five - Out of the Pan

Every cook needs to learn how to use the work horse of the kitchen - the Fry Pan. This week we'll cover Pan Fry and Shallow Fry techniques.  This type of rapid cooking over direct heat with different amounts of fat requires your active attention. We'll cover things like omelettes, steak, mushrooms, Flat head tails, Eggplant and Zucchini.

Week Six - Cooking with Water

Simmering, Poaching, Boiling, Steaming and Slow Cooking are all essential skills of the proud home cook. This week, we will learn about poaching chicken and vegetables; how to boil eggs, and prepare a meat ragu.
